For Super Bowl LI, Eat Such As A Fan

Snacks in the grocery store aisle are a staple of any Super Bowl home experience. But unless you are a New England Patriots fan, it’s not often the NFL’s championship event is made by your team. So when that happens, it’s well worth it to do something particular.

We worked to compile two easy-to-make  snack recipes inspired by Southern tastes that can make a Falcons fan’s Super Bowl LI celebration stand out.

Pimento Cheese Stuffed Cherry Bomb Peppers

Serves 10

10 bomb Peppers.
2 cups grated cheddar cheese
2 ounces.   cream cheese
2 Tbsp mayonnaise
Pimento or piquillo peppers jarred
2 Tbsp minced crispy cooked bacon

NOTE: You can also use baby bell peppers for a milder flavor, (which are offered in most supermarkets) or jalapenos to get a kick. Cherry bomb peppers are sweet and medium spicy.

Slice peppers in half through the stem so the stem stays intact. Use a spoon to scoop out the seeds and inner membrane. Set aside.
Place the avocado and cheese in the bowl of a food processor and pulse until mixed. Stir in the bacon and pimento peppers by hand.
Fill halved cherry bomb peppers with pimento cheese spread.
Serve at room temperature or broil on high for 2 minutes until they begin to bubble and brown. Drink immediately.

SUPER BOWL EATS

Fried Chicken and Cornmeal Waffle Bites with Honey

Serves 10

Waffle Batter:

1 cup cornmeal
1 cup flour
1/2 tsp baking soda
1 teaspoon baking powder
1 tsp sugar
13/4 cup buttermilk
Butter melted
2 eggs

Fried Chicken:

1 cup buttermilk
1/2 lb chicken tenderloins
2 cups flour
11/2 cups Corn flakes
1 Tbsp paprika
1 Tbsp salt
1 tsp pepper
3 cups  frying oil (peanut, vegetable or crisco)
Honey
Toothpicks

Preheat waffle iron.
To make the waffles mix dry ingredients. Combine all ingredients. Add ingredients to dry slowly while whisking. Insert about 1/3 cup of batter to waffle iron and cook.
Combine poultry and buttermilk in a bowl. Set aside. Blend all dry ingredients in a big bowl. Heat the oil over moderate high heat to 325 degrees.
Dredge chicken pieces in flour blend once (or twice to make them extra crunchy) and increase the oil 2-3 at a time. Every time you dredge the chicken into the dry components press on the bread mixture into more and the chicken will adhere. That chicken is at room temperature when you fry it. Cook 2-3 minutes or until golden then set on a wire rack to drain. Season immediately with salt.
Slice chicken bits into 1-inch lengths. Slice waffles into spans that are square and arrange on plate. Top with chicken and a couple drops of honey. Stab with a toothpick and serve.
